Mini Meatloaves

These mini meatloaves are a regular favourite for us. I bake a tray a week. You can eat them hot or cold, and they freeze well too. We have them as quick snacks or part of breakfast. A great way to increase the family’s vegetable intake and to use whatever vegetables are in your fridge.

Ingredients
  

  • 500 g of your favourite mince eg beef, lamb, chicken, turkey
  • 1 medium brown onion
  • 2 cloves garlic
  • 1 small zucchini
  • 1 small carrot
  • 1 stick celery (include the leaves for extra flavour)
  • 1 tbsp macadamia oil or ghee
  • 1 tbsp tomato paste (can substitute good quality Dijon mustard)
  • 1 tbsp dried herbs (or a handful of fresh)(eg parsley, oregano, basil, rosemary, thyme)
  • 1 egg (if mix is not holding together well you can add an extra egg)
  • salt and pepper to taste

Instructions
 

  • Preheat youroven to 180o C /360o F.
  • Place the mince in a mixing bowl.
  • Roughly chop the veggies, then pulse in a food processor until finely chopped.
  • Heat a frypan, add the oil then sauté the vegetable mix until it softens.
  • Add the tomato paste and cook for a further 30 seconds (if using the mustard do not follow this step).
  • Remove from the heat and allow to cool for 20 to 30 minutes.
  • Add the vegetable mix to the mince in the bowl, as well as the egg, herbs, salt and pepper, and mustard (if using). Mix thoroughly. I like to use my hands for this, so give your hands a good wash first, and keep them wet as this stops the mix from sticking to your hands.
  • Fill a 12-cup mini loaf tray (I suggest good quality silicone).
  • Bake for 25 minutes.
  • Remove from the oven, allow to cool, then gently remove from the tray.

Notes

  • If you have the time, you can add some added interest by spreading a thin layer of tomato paste or mustard on top of the loafs prior to cooking.
  • The vegetable ingredients can be just about anything; this recipe is great for using up what is in your fridge and/or those vegetables you are wanting to get the kids to eat.
  • The 12-cup mini loaf tray provides single serves, which are a convenient size to freeze.
  • Re-heat from frozen for 20 minutes at 180° C
